Freezer burn happens when moisture inside the food evaporates and refreezes on the surface. This process, known as sublimation, creates ice crystals that damage the food’s cellular structure. The result is often a dry, tough texture and a strange, off-odor or taste.

While the FDA does not specifically regulate the term “freezer burn,” food safety experts agree that the condition does not introduce bacteria or toxins. It is essentially a quality issue rather than a safety hazard.

Storage Guidelines

Storage times in the freezer are often shorter than people expect. The FDA provides guidelines for how long different foods remain safe, though the state of the food matters. Even if a piece of meat has freezer burn, it can still be safe to eat if it has been stored within the recommended timeframe and has not developed an off smell or slimy texture.

The organization recommends keeping frozen food at 0°F (-18°C) or below to maintain safety. While the cold prevents bacterial growth, it does not preserve flavor or texture indefinitely. Food stored too long, even without visible freezer burn, may become dry or tasteless.

While the USDA confirms that freezer-burned food is technically safe to consume, the quality is usually significantly reduced. The dry spots often make the texture unpleasant, and the flavor can become bland or metallic. Prevention

Avoiding freezer burn involves controlling two main factors: moisture and air. The best strategy is to minimize the amount of air surrounding the food, as oxygen exposure accelerates the drying process.

For loose items like meat, pressing air out of resealable bags before sealing is an effective step. For rigid containers, placing a layer of plastic wrap directly on the food’s surface before putting the lid on can help seal in moisture.

Using a vacuum sealer offers the most reliable protection. This method removes almost all air from the package, creating an airtight seal that protects the food from temperature fluctuations and oxidation. While this requires an initial investment, it is the most effective way to preserve food quality over long periods.
