Salmon and Orzo Make a Quick Dinner

This creamy sun-dried tomato salmon and orzo recipe is a one-pan dinner that delivers on comfort food. It’s ready in under an hour and is a flavor-packed dinner that’s easy to create.

Salmon Preparation

The recipe starts with salmon fillets, which are sprinkled with kosher salt and black pepper and cooked in a skillet. To check if the salmon is done, you can use a fork to flake the fish. If there’s resistance in the middle, it needs to cook longer.

The salmon is cooked between medium-rare and medium, which means the center might be more pink than opaque. If you prefer your salmon to be cooked all the way through, you can put a lid on the skillet and let the fish steam for a minute or two longer.

Orzo and Sauce

While the salmon rests, you can make the saucy orzo. The sauce is especially delicious thanks to sun-dried tomatoes, which have a deep, concentrated tomato flavor and add a hit of umami to the dish.

The sun-dried tomatoes infuse the orzo cooking water with flavor, making every bite of the rice-shaped pasta delicious. You can also add fresh basil before serving, or substitute it with parsley, cilantro, or mint.

To serve, you can round out the meal with a simple green salad and crusty bread for sopping up the creamy sauce. If you have any white wine left from deglazing the pan, you can pour yourself a glass alongside.
