I wish it would have more examples of common mistakes in the kitchen that could be explained by theory. I truly wish that all educational books would take a page from “On Food and Cooking”. The breadth and depth of topics covered was fantastic, and all of the accompanying information made this book absolutely fascinating. I read the ebook on my Kindle Fire, and there were some issues with the formatting. That said, the issues were minor, mostly just chunks of text where they shouldn’t be. Maybe the most useful and interesting book on food I have yet found.
